twice baked stuffed potatoes

Hey everyone!! I've got a really tasty recipe for you all today! :) These are twice baked, stuffed potatoes! Filled with a load of delicious ingredients (cheese, sour cream, half-and-half, butter!), these aren't the healthiest per se, but hey, having them twice a year won't hurt ;) 


These are from my trusty old Taste of Home Cookbook from a few years ago. I've made these potatoes countless times over the years! I've made them for Thanksgiving, Christmas parties, family dinners and at random times when my family is craving these. They are a pretty simple side dish, but fancy enough to make for special occasions. 

You can really tweak this recipe to however you'd like--add more cheese, bacon bits, different seasonings, etc. But I think they are perfect just the way they are. These potatoes do take a couple hours to make, only because they have to sit in the oven for more than an hour. But the actual work involved is easy. 
I served these potatoes with grilled chicken breast and lightly sauteed garlicky green beans. Because the potatoes are so heavily loaded with fatty ingredients, pairing them with a light salad would be perfect if you're trying to watch your weight. Again, I wouldn't recommend making these every day, but every once in a while is perfect :)

Twice Baked Stuffed Potatoes

Yield: 1 dozen

Ingredients

  •     6 large baking potatoes (1 lb each)
  •     Vegetable oil (optional)
  •     1 cup sliced green onions
  •     1 cup butter, divided
  •     1 cup half-and-half cream
  •     1 cup sour cream
  •     2 tsp salt
  •     1 tsp black or white pepper
  •     2 cups shredded cheddar cheese
  •     Paprika

 Directions

  •     Pierce potatoes with a fork, rub with oil if desired
  •     Bake at 400 degrees for 1 hour and 20 min, or until tender
  •     When cool enough to handle, cut potatoes in half lengthwise and scoop out the pulp, leaving a thin shell, in large bowl mash the pulp
  •     In a small skillet, sauté onions in ½ cup butter until tender, stir into mashed potatoes
  •     Stir in cream, sour cream, salt and pepper, and fold in shredded cheese
  •     Spoon the mixture into the potato shells
  •     Melt the remaining butter and drizzle onto potatoes, sprinkle with paprika
  •     Bake at 350 degrees for 20-30 min, or until heated through
